Apple Jack is always a collaboration with local Washington cideries — partners like Tieton Cider Works and Wheel Line Cider Co. provide the fermented cider base, which we then double-distill in our pot stills. The fruit profile comes from English and French heritage apple varieties chosen for their high malic acid content — the source of the variety and intensity you'll find from first whiff to last sip. Bottled at 50% ABV in our 375ml format.
Tasting Notes
Nose Soft and somewhat floral.
Palate Obviously apple and fruit-forward — heritage apple character, not the soft sweetness of modern dessert fruit.
Finish Very sweet.
Closing note
Best after dinner — neat or over a single large cube. Holds up beautifully in a sidecar, or stirred into warm cider on a cold Washington night.
